Girls’ Week

Nik has been in LA for nearly a week, taking care of some things at his parents’ house. I miss him like crazy…it is just so…quiet…around home!! I can’t wait until he gets back, but I have been trying to make the most out of the girls’ week I have had with Jo.
As soon as Nik left, I went grocery shopping and tried to plan meals exactly my way. I realized there weren’t a ton of differences…he has really opened up in terms of what he eats…but I did arrange to cook some yummy Nik-unfriendly foods. For example, I made a delicious meal of scallops with succotash. Succotash was my new food item of the shopping trip (see this post about my cooking resolution). It was very yummy!! Buttery and creamy but wearing a disguise of healthiness in the form of corn and lima beans. Yum. I also made soft tacos with pico de gallo, guacomole, and refried beans–generally when we have tacos, it’s hard tacos with meat, cheese, and sauce (for me) only. That’s about it in terms of difference, though! Most other meals I planned were Nik-friendly. It has been kind of tough cooking for one person, but I’ve been sharing with Jo and enjoying my leftovers.
The other main thing I try to take advantage of altering when Nik is gone (although he usually just lets me control this, too) is TV watching. Jo and I have been enjoying chick flick movie marathons, and last night we instituted a Sex and the City marathon. We almost got though season 1 last night…probably will continue that today.
I have also been scrapbooking like crazy. I’ve been going to Michael’s very frequently, and getting a lot of pages done. I know this is still extremely backed up, but I am finally almost done with scrapping 2008! I’ll continue that today, as well.
So…I can’t wait until Nik comes home…but I have been trying to take advantage of some alone time!
